This is one of Beck’s personal favourites! Great for both a quick simple breakfast or a delicious dessert.
Filling
- 2 Cups frozen mixed berries (personally blackberry and raspberry is a fav!)
- 5 dates – chopped
- 1/2 tsp cinnamon
Topping
- 1 cups oats (could also use quinoa flakes)
- 1 tsp cinnomon
- 1/2 cup mixed nuts – chopped (walnuts,almonds, cashews and macadamia nuts are great for your eyes)
- 1 tbsp coconut oil
- 3 tbsp honey
Meathod
- Pop berries, chopped dates and cinnamon in to a small saucepan and cook on low for 20 minutes (don’t forget to stir regularly)
- While your filling is cooking, prepare toppings. Combine oats, nuts and cinnamon in a bowl. In a medium sized fry pan, melt the coconut oil and 2 tbsp honey. Add oats mix and fry on low for 10 minutes.
- Once your berries are a little mushy, spoon in to your baking dish (you could do 4 small ramekins or 1 large dish)
- Cook at 180c for 30 minutes.
- Allow to cool for 15 minutes before serving. Top with some yogurt and drizzle of honey (or if you want something a little sweeter ice cream or custard)
*A great option for this is using up any left of fruit/nuts you have. It also stores well in the fridge in an airtight container for up to 4 days.
